Amy’s Notes

Amy Dong

Growing up, I ate imitation crab meat straight out of the fridge as a snack. These days, I turn that nostalgic staple into the ultimate warm party dip. I make it for a quick family snack, or as an easier-than-it-looks appetizer for gatherings. Here is why you’ll adore this recipe:

  • Budget-friendly luxury: You get all the rich, decadent flavor of classic crab dip at a fraction of the cost.
  • Ready in under 10 minutes: Uses the microwave for quick, hassle-free heating when unexpected guests show up.
  • Super creamy and customizable: Easy to dial up the heat with cayenne or keep it mild and tangy.

Key Recipe Ingredients

Labeled ingredients for the imitation crab dip.
  • Whole mayo: Adds creamy texture and rich flavor.
  • Lemon juice: Fresh lemon juice is a super simple way to add a fresh flavor.
  • Hot pepper sauce: I use Tabasco sauce, but you can use your favorite hot sauce.
  • Cream cheese: Adds the creamy texture. Cube and soften before use.
  • Imitation crab meat: You may be able to buy this pre-chopped or shredded at the store to save time.

Substitutions and Variations

  • Add Old Bay: Swap the salt and pepper for 1/2 teaspoon of Old Bay seasoning for a classic coastal kick.
  • Turn Up the Heat: Add an extra splash of Tabasco or a pinch of cayenne pepper if you like it spicy.
  • Cheese Swap: Mix in 1/4 cup of shredded cheddar or Monterey Jack for extra cheesy pulls.
  • Real Crab: You can easily swap in lump crab meat or canned crab meat if you prefer real seafood.

Step-by-Step Recipe Instructions

  • Mix all the ingredients, minus the imitation crab meat, in a bowl. Microwave and stir.
  • Fold in the crab meat and mix. Cover and microwave until hot. Taste, season, and enjoy.

How to Prep Ahead

  • Prep Ahead: Combine cream cheese, seasonings, and liquids up to 2 days in advance, then refrigerate in an airtight container. Fold in the crab meat right before microwaving.
  • Storage: Store leftover dip covered in the fridge for up to 3 days. Reheat in 30-seconds at a time in the microwave, stirring frequently until warmed through. Leftovers make an amazing spread for warm dinner rolls or seafood paninis.

Ingredients

  • 1 tablespoon real mayonaise
  • 2 teaspoons onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon lemon juice
  • 1 tablespoon water
  • ½ teaspoon hot pepper sauce I use Tabasco sauce
  • 8 ounces whole cream cheese cubed and softened
  • 16 ounces imitation crab meat chopped or shredded
  • salt and pepper to taste

Instructions

  • In a microwavable bowl, combine all ingredients except for imitation crab meat. Microwave in 30 second increments, stirring in between, until warmed through and smooth. Stir to combine well.
  • Gently fold in crab meat, combining well. Cover and microwave 2 minutes or until hot. Taste and add salt/pepper as needed. Serve hot with crackers, breads, or veggies.

Notes

  • If dip is too thick, add a bit more water to it. Be sure to serve it hot, as dip needs to be warm in order to stay soft and creamy in texture.
  • Variation: add Old Bay seasoning instead of salt/pepper.

Frequently Asked Questions

Can I serve imitation crab dip cold?

You can, but it’s best served warm. Heating it softens the cream cheese, so it stays smooth, creamy, and easy to dip.

Can I make this dip ahead of time?

Absolutely. Mix everything together, cover tightly, and store in the fridge for up to 24 hours. Just microwave until hot right before serving.

What is imitation crab meat made of?

It’s typically made from wild Alaskan Pollock blended with seasonings to mimic the texture and flavor of real crab. It’s budget-friendly and super convenient.

Can I bake this dip in the oven instead of microwaving?

You sure can. Transfer the mixture into an oven-safe baking dish and bake at 350°F (175°C) for 15–20 minutes until bubbly and warm throughout.

Why is my dip runny?

You may notice a little bit of liquid once it’s done heating up. Once it starts to cool a bit, it will firm up. Be careful, it will be hot.
