When I think about my dream roast potato (doesn’t everybody?), it’s shatteringly crisp on the outside, probably roasted in rendered chicken fat. It’s golden-brown all over with craggy edges to catch bits of garlic and seasonings, and yet the inside is impossibly tender and fluffy. Do you have chills, or is that just me?
